Recipe:Spinach, Tomatoes, Eggs, and Feta Cheese Pita



This recipe is more of an eye baller than actual measurements.  When ever I make it, I ball park it.  If you want to have less calories, then use just egg whites.  You can also chop up the tomatoes more, but it's all pick and choose. 

Ingredients:
1 egg 
1 egg white
2 Tbsp Milk 
2 Cherry Tomatoes, halved 
1 cup Baby Spinach, chopped
1/2 Whole Wheat Pita 
Salt and Pepper
Sprinkle of Feta 
Olive Oil 

Directions:

Combine the eggs and milk.


Add the spinach, tomatoes, salt and pepper.


Pour into a lightly greased pan.  


While that is cooking.  Put a little bit of olive oil on the pita, both sides, and warm it up in a toaster oven or oven.  


After the eggs have fully cooked, sprinkle in the feta cheese and fold over the the omelette.  


Take the pita out of the oven, and stuff in the omelette.

Recipe: Cherry Waffles


This is another recipe from this ebook.  I wasn’t sure I was going to like them, but turns out I LOVE them!  They’re really filling.  I usually hate making waffles.  There is so much to clean up afterwards, and until I tried this recipe, I had never made waffles before.  This recipe makes six Belgian waffles and I got four or five sheets of waffles on my iron.  I make this recipe all the time now!  The cherry sauce is a little odd, but it adds just the right amount of sweet to it.  It goes so well with the whole wheat waffles. 


Cherry Sauce:
2 cups fresh or frozen pitted cherries
1/4 cup Water
1/4 cup Honey
2 tsp Cornstarch
1 tsp Vanilla Extract
1 tsp Lemon Juice

Waffles:
2 cups Whole Wheat Flour
2 large Eggs
2 cups Low-fat Buttermilk
1/2 cup fine Cornmeal
1/4 cup Light Brown Sugar
1 tbsp. Canola Oil
2 tsp Vanilla Extract
1 1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Salt

Directions:



Heat up a waffle maker. 
Put all of the cherry sauce ingredients into a sauce pan and heat up on medium heat.  Bring to a boil and then turn down the heat to low and let simmer. 


Next in a bowl combine all of the dry ingredients, mix.  In a separate bowl mix the wet ingredients.  Combine the mixes. 


After your waffle iron is ready, add enough mix to cover the surface (all waffle irons are different)  and fully cook. 


Serve the waffles with some cherry sauce on them and enjoy!

Recipe: Cinnamon Biscuits



I've decided to get into pinterest, and I'm pretty sure that is where I found this recipe, but it's not pinned so maybe it was just from Google.  I'm not sure.  All I know is that I'm glad that I found it.  This recipe is simple and doesn't take up that much time.  This biscuits are delicious and taste just like pretzels.  (I think.) 


Ingredients:
2 1/3 cup Bisquick 
½ cup Milk 
3 Tbs Melted Butter 
4 Tbs Sugar, Divided 
1 tsp Cinnamon 
Caramel Ice-Cream Topping


Directions:
Pre-heat your oven to 425 degrees.


Mix half of the sugar (2 Tbs) and the cinnamon together.


Mix the rest of the ingredients together in a large bowl until the dough forms.


Scoop out a tablespoon sized portion, roll into a ball, and then roll them in the cinnamon sugar mix.
Place on a baking sheet and bake for 8 to 10 minutes. 


Serve them warm with the Caramel sauce for dipping.

I accidentally put 1 Tbs of cinnamon instead of 1 tsp. (I was wondering why mine didn't match the pictures for the original...)  So your cinnamon mix will look a little bit different than mine.  I also used a different type of sugar, so if you white sugar it will look completely different.

Recipe: Strawberry-banana Bread:



My mom showed me this recipe the other day and originally it was just strawberry bread, but we had an older banana that we needed to get rid of, so we just threw it into the mix.  You could do the same, or you could just keep to the strawberries.  Also, I used self-rising flour so I did not include the salt while I was making it. 

Ingredients:
1 ½ cups of all-purpose flour
¾ cup sugar 
½  tsp salt
1 tsp ground cinnamon 
½ tsp baking soda 
2 large eggs, lightly beaten
2/3 cup vegetable oil 
1 ¼ cups mashed strawberries



Directions:
Preheat oven to 350 degrees, and grease an 8 by 4 inch glass loaf pan with cooking spray.



Whisk together the flour, sugar, salt, cinnamon, and baking soda in a bowl. 

Mash up the strawberries and banana. 


Lightly beat eggs.


Add the eggs and the oil, then the mashed strawberries and banana.

 Mix them all together to make a light pink mix.


Transfer to the loaf pan and bake for 75 minutes.


I like to heat my slice up and then top with butter, but my sister and mom like to add cream cheese.  Both ways are pretty tasty!

Recipe: Crepes!

To take a break from the mug delights, I decided to try to make some crepes.  My mom and sister have been on a kick recently, and they have been buying pre-made crepes and having difficulties trying to warm them up so why not try and make them at home. 


What you’ll need:
1 cup of flour
1 cup of whole milk
2 eggs
1 tbsp granulated sugar
2 tbsp melted butter
¼ tsp salt


What you need to do is mix together all of the ingredients together and make sure the mix is very thin.  (if too thick, add more milk.)  Pre-heat your skillet on medium heat, and once heated, use a ¼ cup measurer and pour the mix into a 12 inch pan.  The mix separated a little bit, but remixing a little bit it went back to normal.  I also had a really hard time getting the mix to be a complete circle, so I had a few tentacles. I found that tipping the pan made it a lot easier.  Each side should take around 30 to 45 seconds to fully cook.  


After they’re done, you can add whatever you want.  I decided with whipped cream and strawberries.  Some other options are: Nutella, bananas, powdered sugar, peaches, another type of cream, and so much more.
