Recipe: Spinach Artichoke Dip Pasta


If you know anything about me, then you know how much I absolutely love spinach artichoke dip, and when I saw that I could make it into a pasta I jumped on the recipe.  (Not literally, but you know, why not?)  I loved this dish!  It was so tasty.  It was a little time consuming, but totally worth it!

Ingredients: 
8oz Rotini 
1 tbsp Butter 
1 tbsp Olive Oil 
1 large Shallot, minced
2 cloves of Garlic, minced 
3 tbsp Flour 
2 cups Skim Milk 
1/2 tsp Kosher Salt 
1/4 tsp Black Pepper 
1/4 cup Shredded Parmesan Cheese 
2 oz of Goat Cheese, room temp. 
3/4 cup Shredded Skim Mozzarella, divided
14 oz can Artichoke Hearts, roughly chopped 
2 cups Baby Spinach 

Directions: 
Preheat your oven to 375 degrees. 
Cook Pasta.


In a large sauce pan melt the butter and olive oil over medium high heat.


Add the shallot and saute for about two minutes, or until the shallot is soft. 
Add the garlic and saute for another minute.


Add in the flour, stirring until completely combined. 
Cook for about another minute.


Slowly pour in the milk and whisk continuously.
Add the salt and black pepper. 
Whisk until the sauce thickens.




Add the parmesan cheese, goat cheese, and 1/2 cup of the mozzarella.  
Whisk until completely melted.


Add in the artichoke hearts and spinach. 
Heat until the spinach has wilted.


Combine the sauce and the pasta. 
Put into a casserole dish and top with 1/4 cup of the mozzarella cheese.


Put in over and cook until the top is a golden brown.  About 15 to 20 minutes.

Azure Naturals Vitamin C Serum:




This is another product that I got in the mail a few weeks ago and I instantly started to use it.  I didn't really know what it was for, but from what I was reading from the company it helps all different things.  



It helps to repair sun damage, fade age spots, and reduce fine lines and wrinkles.  It is easy to apply and it absorbs into the skin so quickly.  After the first time I used the product my skin felt soft and I could see a little bit of differences.  My face felt firmer too.  


It smells like lemons in the bottle, but when I was applying it, it sort of smelled like licorice.  



After a month of using this my skin is softer and looks so much better than before.  I have one area on my chin/neck that just appeared when I was younger and this serum has help it lighten up.  It's amazing.  

I really like this serum, and I'm a little upset at myself that this is the first time that I've tried a Vitamin C serum.  I really need to try more things because I love the results I've been seeing!

FOTD #19:



Today I am wearing a white shirt that has a pattern on it but you can't see it unless your up close. (Up close here)  It also has a gold zipper in the back.  I got this shirt from TJ Maxx and I love it!  I think it cost me around $20.  



I have my usual primers on, Hard Candy for my eye lids, and then Rimmel London Fix and Perfect 002.  
On my eyes I have Maybelline's "The Nudes" eyeshadow.  I combined the shimmery brown. shimmery dark brown, and the shimmery gold colors just to have something different.   I then lined both my upper and lower eyelashes with the new Kajal eyeliner in the color Onyx Rush.  
My mascara is my usual L'Oreal Paris Voluminous Carbon Black.
On my cheeks I have Estee Lauder in Peach Passion.
And finally on my lips, since  I went to bold with my eyes, I went with Revlon Lip Butter in 080 Strawberry Shortcake.  

 I still have no complaints about the Kajal eyeliner yet.

Favorite Words #6:


The first word this week I have been in love with for about two years now.  It's from one of my favorite songs called "In Sooth" by Green or Blue.  
I plan on having it tattooed on me someday.

(I saw this word on tumblr, and that was the definition given, but when  I went to google, it actually means stomach pains or queasiness.  Also, intense anxiety or nervousness.)

Mixed Drink: Old Fashioned AND Btipsy Muddler Review!





I got this muddler in the mail a few weeks ago, and I have no idea why I have never owned a muddler before.  
A muddler is used to mash up berries, mint leaves, lemons, limes, and so much more.  
The first thing I made was an Old Fashioned.


Ingredients: 
1 sugar cube 
2-3 Dashes of Angostura Bitters 
2 Orange Slices 
3 oz Bourbon Whiskey 
Maraschino Cherry for Garnish 


Instructions:

 Place the sugar cube at the bottom of an old fashioned glass, and saturate the cube with bitters.


 Add one orange slice.


 Muddle these ingredients.

Fill the glass with ice cubes.
 Add the bourbon.
 Stir well.
Garnish with the cherry. (Optional)

This muddler does everything a muddler is supposed to do.  It's a very light weight sturdy bar tool.  Btipsy's muddler is made of stainless steel with a plastic bottom, which I'm assuming, is to protect your glass.  
I've never used another kind of muddler, so I really have nothing to compare it to, but this one works great.  I'm really excited to see what other drinks I can make now!  (Mostly excited for mojitos!)
  
As for the Btipsy company, man oh man are they great!  When I had questions they answered right away.  I've waited days before some have gotten back to me, but they are quick.  Also they did a few follow up emails with me just to make sure that I signed up for the 3 year warranty and to make sure that everything was to my satisfactory.  Which of course it was!  They were amazing, and I highly suggest the Btipsy company!

Maybelline Master Kajal Eyeliner Review:



I've seen the ads for this eyeliner so many times, and when it first came out I wasn't really sure if I would buy it, but looking at it a little bit more, I decided why not?  I got two colors Onyx Rush and Purple Dusk. 


I wasn't sure if they were like crayons or if they were more along the lines of felt tips.  I think I prefer felt tips, I feel like they glide on more easily, but crayons work fine.  These are like crayons.  You definitely have to "warm" them up.  (I put warm in "" because I don't want you to think I microwave them or anything...)



I was actually surprised at how easy it was to put this eyeliner on.  I'm not very good at keeping it on the side like it says to, but that is just something my hands have to adjust to.  The color pay off is really nice also.  When I'm applying it I don't have to go over the same line nine times.
Onyx Rush stays in my waterline perfectly, but Purple Dusk not so much... I have always had trouble with keeping eyeliner in my waterline ever since I was a teenager.  I know people say to go with waterproof, but I don't know.  I tried waterproof a long time ago, and remember hating it, but maybe I should give it another try.  


I wore Onyx Rush out the other day and I only had to touch up once, and it wasn't exactly needed.  
I've only worn Purple Dusk around the house because I haven't been back out since getting them.  But it's a gorgeous dark purple color.  I'm totally in love with it, and you'll be seeing it in a future FOTD, I'm sure of it. 
I currently don't have anything negative to say about Maybelline's Master Kajal Eyeliner.  Maybe I will when it starts to run out and it's a wider tip, but I won't know for a while.

And the girl with the new computer is...


ME!

I know I haven't been writing these little personal updates recently, but really nothing has been going on.  (I also slacked off last week and only had a few blog posts out. Sorry.)  But currently I am typing this blogpost on my brand new computer!  
This computer is a little different than my old one.  I'm finally back to HP and I love it.  I hated my Toshiba.  I don't know why, I just didn't like it much.  I feel like HP is a better brand.  But I guess everyone has their favorite brands.  The biggest difference with this computer compared to all of my other computer is that this one is both a normal PC and it's a touch screen...So weird.  I keep touching the screen for pointless reason just because I can.  

I don't know how long this little excitement about how new it is and how different it is to have a touch screen but I think it's going to be a while.  Also, since it is the first time using it,  I still have no idea what I'm doing.  I'm just playing around and getting every thing I had before, and getting all of my accounts back up and already logged in.  (Yes, I keep myself logged into everything...)  

Anyways, no more me complaining about how my computer is broken! Yay!! 

If you don't know what happened to my old computer, first I dropped it, and it was of course on the side that the charger goes into, and of course it damaged something in there and so it became harder and harder for the computer to stay plugged in.  Then I thought that it was going to die completely when it got a lot of water damage, but it dried out all by itself and I continued to struggle with the charging.  I don't really know how long I had problems but in the last two or three months it just became ridiculous.  I had to shake it and twist it and hold it in all different kinds of positions, it was a mess.  But on Saturday night it finally gave up and the little metal piece inside the jack came off and fell out.  So, I made sure I had everything I need off of that computer, and I finally bought a new one.  
Hopefully I have better luck with this one.  (I'm technologically cursed, I swear!) 

Alright, enough about my computer!  At the end of this week, on Saturday, my friend is having her baby shower!  I'm really excited.  This will be my first baby shower!  I haven't gotten her any gifts yet, but I will this week and then next Monday I'll blog all about it, and show pictures of everything I'm comfortable (and she's comfortable) with sharing!  

So exciting!

FOTD #18:


Today I just kind of did what I wanted to do.  Something a little different than what I usually do.  
I'm wearing my favorite shirt from TJ Maxx.  It cost about $20.  It's kind of tunic-y, and it's so soft!  It's a little slouchy and that's also what I love about it.  It's a 3/4 sleeve, and I never want to take it off.  ( I obviously do, but you know what I mean!)


On my face I have Hard Candy eye shadow primer.  
Then Rimmel London's concealer in 125 fair.  
On my cheeks I have Revlon 007 Melon Drama.  
My eye shadow is from Estee Lauder 33 Ivy Envy, and my eye liner is also from Estee Lauder, Pure Color duo eye liner 01 Blackened Black.  
My mascara is my every day mascara from L'Oreal, Voluminous Carbon Black.  
And on my lips I have Revlon 657 Fuchsia Fusion.

Recipe: Chicken Alfredo Baked Ziti

I though that this dish was going to be a bit harder than it actually was.  I didn't know making alfredo sauce was going to be so simple.  This dish was really good, and is definitely a keeper!  
Enjoy!


Ingredients for the Dish:
12 oz of Ziti
2 cups Shredded, Cooked, Chicken
1 1/2 cups Shredded Mozzarella
Shredded Parmesan or Parsley (Optional)
1 Batch of Alfredo Sauce


Ingredients for the Alfredo Sauce:
1 tbsp Olive Oil
4 Cloves Garlic, Minced
3 tbsp Flour
1 cup Chicken Broth
1 cup Low-Fat Milk
3/4 cup Freshly Grated Parmesan
1/2 tsp Salt
1/4 tsp Black Pepper

Directions for the Sauce:

Heat the olive oil in a large saute pan on meduim high.
Add the Garlic and saute it for 1 minute.



Sprinkle in the flour, stir to combine, and cook for another minute.


Slowly add the chicken broth.  Whisk until smooth.




Whisk in the milk, and bring to a simmer.
Let cook for another minute.
Stir in the parmesan cheese, salt, and pepper.  Stir until the cheese is melted. (For some reason, I do not have a picture of this. Sorry.)
Remove from heat and set aside for the pasta.


Directions for the Pasta Dish:
Preheat your oven to 375 degrees.
Cook the pasta.


Add the chicken and alfredo sauce.
Toss until combined.



Pour half of the pasta into a 9x13 inch pan, sprinkle 1 cup of shredded cheese.



Then top off with the rest of the pasta.


Sprinkle with the remaining cheese and bake for 20-25 minutes.
Enjoy!

Hello November!


This year is no different.  The leaves are falling and changing color at a very fast rate and it has been so chilly, but I love it.  

This year Thanksgiving is going to be at my Aunts house.  I'm assuming all of the usual people will be there, Aunts, Uncle, cousin, and then my mom, sister, and me.  Lots of fun.  
My mom is going to make a dish that I made last week, the cheesy broccoli.  I'm really excited to see everyone's reactions.  I know that I didn't invent the recipe, but I found it and my mom liked it enough that she wants to share it with the family.  
So happy.  
Also this month one of my friends is having her baby shower!  The first one I'll ever go to!  I was also one of the first people she told, which is exciting.  I'm not the biggest fan of babies, but some of them are cute.  That's happening on the 15th.  She's having a baby boy and not going to lie, I'm exited to buy some baby clothes/accessories.  I think I'll do a haul!  That's exciting right?
Anyways, I'm not really sure what else is going to happen this month.  Last year I was thinking abut birthday parties, and this year, one of them is going on a cruise for his birthday with his girlfriend (it's a surprise, shh.)  and the other one is really busy doing other things.  So no birthdays.  

I'm excited for December, not going to lie.  I'm hoping that it will be happy and exciting.  Last year I tried so hard to make it fun, but it didn't really work out.   Maybe I'll try to visit Christmas stores.
I don't know.
